Pink Beignet Waffles with Sprinkles


Can you stand one more pink treat before the onslaught of green St. Patrick's Day foods?? I meant to get this one out before Valentines Day, but life got in the way yet again!  That said, I don't think you need Beignet Waffles just for the holidays.


On the hubby's last trip to New Orleans he brought me back lots and lots of beignet mix.  He knows me oh so well.  I've made beignets a couple times and if you haven't had them before, beignets are magical little puffs of fried dough with lots and lots of powdered sugar on top.  Since I'm always trying new mash-ups and recipes, I decided to waffle them up.  


I just followed the recipe on the box for 1 batch but also added 1/2 cup of strawberry Nesquick (powdered strawberry flavoring that you add to milk aka strawberry milk) for flavor and color. Then just make waffles from the batter.


Once cooled at melted candy wafers (candy melts) and your favorite sprinkles.  


Feel free to add a lot because the beignet mix is not very sweet on its own so it needs a little sugar to sweeten things up.


Or you can also just add powdered sugar too!


Did I mention adding lots of sprinkles??

Pink Ballerina Tutu Cereal Treats



Sometimes you just need a sweet treat.  And sometimes you just need a pink and girlie cereal treat.  It makes a long and tough day much better.  Plus cereal treats are so easy to make, you can whip them up in like 15 minutes or less.


Mix up a batch of rice krispie treats.  You can use traditional rice krispies or whatever cereal you have hanging around.  You can't mess them up.  All you need is:
  • 6 cups of cereal
  • 1 package of mini marshmallows (10 ounces)
  • 3 Tablespoons of butter
  • Pink food gel/coloring
  • Pink candy melt (Wilton makes a new "hot pink" color now!)
  • Pearlized larger nonpareil sprinkles
Melt butter in a deep pan over medium.  Add marshmallows (turn off heat).  Once all nice and melty, tint pink with food gel/coloring.  Mix in cereal.  Add to a pan.  Let the treats "set" 5-10 mins.


Cut your treats into squares, then just "pipe" some melted candy into the tutu dress shape.  Before the candy dries, add some sprinkle accents to the dress.


And that's it, simple cute little cereal treats! These were for a special little girl's birthday party, who just happens to love love (love) ballerinas.    Cereal treats make me smile, always have, always will.

Ballerina Peeps Treats


It's Marshmallow Peeps season again! The traditional bunnies and chicks are my favs.  If you read the blog, you know I have a special place in my heart for Peeps.  You can see more Peeps treats from over the years here.


This year I made some little Ballerinas, all fancied up for their first performance.

Glam Skeleton Head Brownie Cupcakes


So is anyone else kinda tired already of all the orange, black, and yellow colors for Halloween? I know right, it's barely October so how can I be bored with it already?? Probably because I've been over at Pinterest way too much lately and there's all sorts of Halloween treats and crafts being showcased over there, pretty much since the end of the summer.


But I 'm still excited for some Halloween treats - but just in some different colors.  Hence the glam'ed up skull cupcakes.

First some candy skulls - in pink, light blue, purple, white and black.  These are simple too, just add some candy melt to some ice cube tray molds- at let the candy re-harden.  I get alot of the molds for real cheap at dollar stores or Target.


I had wanted to make these glittery skulls, but didn't really have any edible glitter and guess what, I tried this homemade glitter (which is everywhere on Pinterest).  I'm not sure where the original idea comes from but it didn't really work for me.  Not "glittery" at all.

So instead I just brushed the skulls with a little water and dipped them in regular granulated sugar.  I guess it kinda works, but not really the look I had in my head.


Plus I thought they needed a little something-something, like pearl eyeballs.  Pearlized sprinkles always makes stuff fancy, no?


Twist a toothpick in the bottom and you have some instant cupcake toppers.  I added these to a boxed brownie mix baked as cupcakes.  Pipe some pink buttercream on top and add more black sprinkles and a few more pearl sprinkles.  If you have spider or skull candies, throw them on too.


And you can make a cute couple.  That's sorta halloween-y in a cute, spooky, fancy way right?


And Happy October peeps! Otherwise what I call "The Month of Pumpkin Spice Everything!" I loves me a pumpkin spice latte and all, but really pumpkin spice candy corn? or pumpkin spice Pringles?? pumpkin spice pasta???? pumpkin spice Seltzer???? That's just crazy talk.  Everytime I see another pumpkin spiced flavored something or other, this is what I have in my head:

marbled loaf and mini heart shaped cakes...!


So I'm celebrating my 3 year Blog Birthday this month!! Woohoo!! It's kinda hard to believe it's been 3 years already but as I look back at all 189 posts from February 2010 it surely has been 3 years.  Crazy!

I was going to do a fancy birthday cake but decided I'm totally not feeling too fancy these days and I'm all about comfort and simplicity this year-but definitely not plain and boring, it still needs to be fun!  

If you read the blog you probably know I have a thing for colors.  I love swirled colors, contrasting colors, or rainbow colors, and I really love the look of marbled loaf cakes.  They may not be the fanciest of cakes, but the colors always look so pretty swirled together and the flavor is usually so cakey and buttery and totally what I'd pick for a dessert.  And it doesn't even have icing on it (I know sacrilege!) but it really doesn't need it with all the butter loaded inside.

I also have a thing for matcha too and have used it a few times like here and here and here.  Firstly, it's green (one of my fav colors) and secondly, it's green tea flavored (another fav of mine!).

When I saw this matcha and chocolate marbled loaf cake over at Pass the Sushi, I knew it was a definite pin for me and it has been on my to do list for ages.


I knew I wanted to do 3 colors for this so I did 1 and 1/2 times the recipe.  The colors by no coincidence match the blog colors! Once you have the batter mixed up, separate into 3 bowls (I eye-balled it to try to get it even into 3 bowls), then add the cocoa powder to 1, green tea matcha powder to the 2nd bowl, and the last I left plan but tinted the batter just slightly pink with food gel).

To swirl, add the green tea batter first (use whatever flavor you want more prominent as this is kinda the base of the loaf), then add some chocolate batter and pink batter, then more green.  I just plopped some in and then using a butter knife, swirled the batters together.  Don't over swirl because you can start mixing the colors too much and you lose the nice big marble'y look you want (and you can get a yucky brown color for your loaf).


The marbled loaf came out great BUT I knew I wanted to fancy it up a bit too, since it is for a birthday after all.  After cutting a slice and singing happy birthday to the blog, I just cut the rest into slices and used a heart shaped small cookie cutter to cut some cute little hearts out.


Aren't they super cute??! And don't worry the scraps most definitely did not go to waste.

I probably could have eaten the entire batch, but decided to bring them along for others to enjoy too and just plopped them into some mini cupcake liners.


A cool tri-colored marbled loaf AND marbled mini heart cakes? Yep that's totally me!

Again happy blog birthday to me! It's been so fun coming up with fun stuff to share over these past 3 years.  I had been doing it mainly for my kids and family and friends and it still amazes me that there are so many of you that come back to visit, to encourage me and to ask questions or share your warm thoughts and feedback.  I've also made some great friends over these years that I've never met before in real life-but really are friends.  The blogging community is such a amazing group of people.  And finally I do this for me and it's one part of my life that is all mine.  I work full-time, and have a great husband and 3 amazing kids but as with a lot of us, life is hectic and nuts at times and the responsibilities are always competing.  It's been so therapeutic to have something that I do just for me.  So THANK YOU THANK YOU THANK YOU for continuing swing by this part of the blogosphere every so often.  I truly appreciate it.
