whoopie cookies with homemade rainbow chips....!


...so although st paddy's day has come and gone.....i still think rainbow stuff works pretty much any time of the year!

.....ok and i know these are really just filled sandwich cookies....but i was thinking of making whoopie pies but ran out of time and decided to do sugar cookies.....so i'm going with "whoopie cookies"...!

...take your fav sugar cookie recipe (or in my case i used a boxed mix to speed this up) but did make some rainbow vanilla chips....i used candy melt/wafers in all different colors....


....just melt in a zip lock bag...snip off an end and "pipe" chips....super simple because i've done green tea chips here....

...but i was chatting with someone on instagram (which i love!...find me @sugarswings there!)....if you don't have access to different colored candy melts then you can use white chocolate and tint with an oil based food coloring or powdered food coloring (when i made them before here, i used matcha green tea powder to tint them...the color ended up being a really pretty natural green color)....

...but if you need to have candy melts in every color (like me!)....then you end up with a bowl of rainbow chips which were then added to the sugar cookie mix.....


.....and also had some left over swiss meringue buttercream so decided to make sandwich cookies aka whoopie cookies!....sounds more fun than "sandwich cookies"....right??

leprechaun cupcakes


....so it's almost st patty's day!....woohoo!....love the color green and how everything turns that color around this time....and since the gnomes cupcakes came out really cute....figured i'd give leprechauns a go.....!

....the leprechauns are totally edible and are made with a bunch of candies....the hats are green candy melt/wafers and a mini marshmallow....."pipe" a circle...then add the marshmallow while still wet....once dry dip the rest in green candy melt (much easier said then done because they are tiny!).....


....the rest of the body is made from a hershey's kiss and a vanilla tootsie roll....cut off the tip of the kiss to use as the body and nuke the tootsie roll for about 10 seconds in the microwave to make it soft....then roll into a ball for the head.....attach the head to the body with some candy melt.....once hardened dip the body into green candy melt....


....with edible food writer add a black band on the hat and a sprinkle decoration.....and you get some little leprechaun hats....

...you can also see them made here at munchkin munchies made from mini marshmallows and mini oreos and added to granola....so very cute!!....


....add the orange beard/hair with orange candy melt....and while still wet add the hats....the rest of the detail is edible candy writer, sprinkle "buckles", and nose/arms are candy melt too....

....and you get a little tiny leprechaun crew....ready to cause some ruckus.....


....add to some cupcakes with some grass frosting....4-leaf clovers and some gold sprinkles since they must have dropped their pot's of gold...you know leprechauns are really clumsy.....(i thought about doing some pots of gold....but kinda lost the motivation!).....

rainbow blondie bars (3 ways).....!



....so i may have mentioned i have a thing for rainbows over the couple of years that i've been doing this blogging thing.....like here...or here....or here...or here..!...and of course i have a rainbow pinterest board too....it makes my rainbow obsession so much easier!...

...these are just a simple blondie bar recipe (without any add-ins)....double the batch and divide the batter up into separate bowls....(kinda looks gross in this pic...right??)


....then add whatever colors you like in your rainbow.....(colors will be darker because the batter is dark to start with--used the color gels for this)....


....then spread one layer at a time in your baking pain.....try to get the layers as even as possible.....


.....much easier said then done!...


.....then cut up into bars....

....or cut into rainbow shapes and add some clouds with candy melt or white chocolate chips....

....or cut the rainbows in half and add pot's of gold for st. patty's day....(also made from candy melt and round yellow flat sprinkles)....

....truthfully i'm not really happy with how these turned out....the colors could have been better...next time i'd use a recipe that isn't as dark to start with (this was really tasty but used brown sugar)....also the air pockets kinda bummed me out when you cut the bars.....probably not a major issue when you do regular blondies or brownies but since i was going for the rainbow look i was looking for it to be more uniform....plus i don't think i got all the brown sugar chunks totally dissolved in the batter either which left some air pockets too....so that's probably a technique thing versus the recipe....and lastly i was hoping for straighter color lines but again easier said then done when layering the tinted batters in....oh well you bake and you learn!
