Candy Pots of Gold with Mini Gold Cookies



Hey all!  It's one of my favorite times of year when all the green and gold treats start showing up over the interwebs! 

Green has been a favorite color since I was little and I still fall for green stuff to this day.  And gold, well that's a no brainer because you don't expect treats to be gold - but there are plenty of them these days.  

So for this St. Patrick's Day I made some little pots of gold with gold treasure inside.  Everything is edible and would make a nice little addition to a Saint Patrick's day party (or just as a special treat for your little leprechauns)!

Colorful Halloween Candy Monsters


Hi everyone, it's October! Woohoo! 

Which means it's Halloween.  Which also means it's Monster Season! 


I have some super easy ones for you too.  


And most are made with everyone's favorite candy - well at least my kids' favs - Kit Kats!


Make a bunch of candy Halloween monsters with the kiddos.  Super fun for everyone because the messier the better!

Matcha Shortbread Cookies - 2 Ways


Since St. Patrick's Day is right around the corner I figured I'd add to all the green foods that show up this time of year.  


And believe it or not I've never made shortbread before even though shortbread cookies are one of my favs.  The dough is so simple to make - butter (and lots of butter), flour, sugar, salt and to green it up I added some matcha.  Matcha is green tea powder and if you like green tea then you'll LOVE matcha.  Plus it gives everything a neat green color.


I used small cookie cutters to cut out the little flower shapes but also added some of the dough to my madeleine pan.


Bake shortbread about 12 -15 minutes but don't over bake or the cookies will be too brown and you definitely want to see the color matcha gave them! (You can see my madeleines are a bit too browned when they came out of the pan - newbie move!)


I added a little matcha to some vanilla buttercream and slathered a bit between 2 of the cut out cookies.  A big green sprinkle added makes them look like little happy flowers.  


Or drizzle with some melted green candy wafers and other sprinkles and you have a neat green treat for St. Patrick's Day.  Enjoy with a cup of green tea or coffee!

Green Beer Bread


So Saint Patrick's Day is this Monday! Woo! I pretty much love anything green, even green food which is really weird since green food can = green mold which = pretty gross.  But let's pretend green mold does not exist for the purposes of this post.  

I think my love of green stuff started when I was little and the local supermarket had green sandwich bread around St. Patrick's Day time.  Does anyone else remember that? Loaves of pre-sliced green bread like white wonder bread but green?? I can't find any pictures of it so I'm starting to think I imagined the entire thing.

Anyway, St. Patrick's Day is all about green stuff (obvi) so green food is a must as well as green drinks! So I figured I'd throw them both together in some green beer bread.

Start with your favorite beer.   And just like when you cook with wine, use a decent-good beverage if you want a good final product.  Hubby always has some excellent beers on hand so I snagged one.   Nugget Nectar, an IPA from TRÖEGScraft brewery based out of PA (great beers and great artwork on their labels!)

For recipes, I went to my friend Google, and found this one for 5 ingredient beer bread by Half Baked Harvest.  So simple and it looked really tasty.  In place of the brown sugar, I substituted 1/2 cup of regular granulated sugar.  I also added a little green food color to the beer before adding it to the mixture (see pic above).


Add the green beer to your dry ingredients and mix.  But don't over mix. The dough will be a little sticky.  Add to a pan (I also added some green non-pareil sprinkles just because I could) and bake at 350 degrees for about 40-50 minutes.

Add a little pat of butter and you're all set.  

If you've never had beer bread before, it's something you have to try.  The alcohol will cook off during the baking process and the baked bread comes out really nice - moist and slightly sweet (but not super sweet).  A nice little treat to bring to a party 1) because it's really tasty and can be eaten alone or as a side with food and 2) it's super fast to throw together.  


And I know not everyone will look at this and go "Yum, that green hunk of bread looks mighty appetizing, give me the entire loaf!", but if you are weird like me and love all green foods, you might.   Or maybe you just like seeing all the fun green stuff on St Paddy's day, either way I hope you like it!

Mint Chocolate Chip Men Cookies for St Patty's Day!


So it's almost St. Patrick's Day! The time of all things green which just happens to be one of my favorites colors.  Especially food (well except moldy green food because that's just gross)! 


I'm always looking for other uses of my molds and cookie cutters and started thinking about the gingerbread man cutter, which usually gets stored away most of the year except to be dusted off around christmas time.  Of course these guys are not exactly leprechauns, but maybe if you use your imagination a little they can be.  AND I pinned this mint chocolate chip cut out cookie recipe ages ago from Flour De Lis and thought mint chocolate chip men cookies for St Patty's Day would be a great excuse to make them.

I followed the recipe pretty much exactly except I used mini chocolate chips. 


Roll out the dough with a little bit of flour to prevent sticking and cut out your gingerbread men leprechauns!


I put the cut out cookies in the refrigerator for about 10 minutes before baking (the recipe suggests the freezer but I couldn't get the cookie sheet to fit, and I'm assuming this helps to prevent the cookies from spreading while baking, and keeps the shape a little better).  


I also did some mini chocolate chip men in another mini mold I have.  I made them around christmas time here as mini super heros and also turn them upside down to make reindeer here!  Definitely love re-using the molds for other ideas!


Then just add some fun St. Patty's Day sayings or little shamrocks to give them a little something extra. I used royal icing but you can using regular frosting or candy melt too.  To speed these up a lot you could also use store bought sugar cookie dough and add about 1 teaspoonful of peppermint extract, some mini chocolate chips, and some green food coloring.


And if you like mint chocolate chip, you have to make these! Eat some with a big glass of milk (or a shamrock shake!) and you'll be so happy you did.  Mint Chocolate is a flavor that all 3 of my kiddos like (go figure!) so these went over really well as an after dinner dessert today.

marbled loaf and mini heart shaped cakes...!


So I'm celebrating my 3 year Blog Birthday this month!! Woohoo!! It's kinda hard to believe it's been 3 years already but as I look back at all 189 posts from February 2010 it surely has been 3 years.  Crazy!

I was going to do a fancy birthday cake but decided I'm totally not feeling too fancy these days and I'm all about comfort and simplicity this year-but definitely not plain and boring, it still needs to be fun!  

If you read the blog you probably know I have a thing for colors.  I love swirled colors, contrasting colors, or rainbow colors, and I really love the look of marbled loaf cakes.  They may not be the fanciest of cakes, but the colors always look so pretty swirled together and the flavor is usually so cakey and buttery and totally what I'd pick for a dessert.  And it doesn't even have icing on it (I know sacrilege!) but it really doesn't need it with all the butter loaded inside.

I also have a thing for matcha too and have used it a few times like here and here and here.  Firstly, it's green (one of my fav colors) and secondly, it's green tea flavored (another fav of mine!).

When I saw this matcha and chocolate marbled loaf cake over at Pass the Sushi, I knew it was a definite pin for me and it has been on my to do list for ages.


I knew I wanted to do 3 colors for this so I did 1 and 1/2 times the recipe.  The colors by no coincidence match the blog colors! Once you have the batter mixed up, separate into 3 bowls (I eye-balled it to try to get it even into 3 bowls), then add the cocoa powder to 1, green tea matcha powder to the 2nd bowl, and the last I left plan but tinted the batter just slightly pink with food gel).

To swirl, add the green tea batter first (use whatever flavor you want more prominent as this is kinda the base of the loaf), then add some chocolate batter and pink batter, then more green.  I just plopped some in and then using a butter knife, swirled the batters together.  Don't over swirl because you can start mixing the colors too much and you lose the nice big marble'y look you want (and you can get a yucky brown color for your loaf).


The marbled loaf came out great BUT I knew I wanted to fancy it up a bit too, since it is for a birthday after all.  After cutting a slice and singing happy birthday to the blog, I just cut the rest into slices and used a heart shaped small cookie cutter to cut some cute little hearts out.


Aren't they super cute??! And don't worry the scraps most definitely did not go to waste.

I probably could have eaten the entire batch, but decided to bring them along for others to enjoy too and just plopped them into some mini cupcake liners.


A cool tri-colored marbled loaf AND marbled mini heart cakes? Yep that's totally me!

Again happy blog birthday to me! It's been so fun coming up with fun stuff to share over these past 3 years.  I had been doing it mainly for my kids and family and friends and it still amazes me that there are so many of you that come back to visit, to encourage me and to ask questions or share your warm thoughts and feedback.  I've also made some great friends over these years that I've never met before in real life-but really are friends.  The blogging community is such a amazing group of people.  And finally I do this for me and it's one part of my life that is all mine.  I work full-time, and have a great husband and 3 amazing kids but as with a lot of us, life is hectic and nuts at times and the responsibilities are always competing.  It's been so therapeutic to have something that I do just for me.  So THANK YOU THANK YOU THANK YOU for continuing swing by this part of the blogosphere every so often.  I truly appreciate it.

memorial day camo whoopie pies....!


so it's memorial day...as i was trying to explain today to my 7 year old what a "memorial" is...i realized i need to do a better job about talking about holidays with the kids...they are more than just days off....and this one in particular is more than picnics and bbqs...we have a pretty good darn life
in part due to many fallen soldiers that have given their lives for this great country of ours....

i also realized explaining some things to the kiddos is definitely getting more difficult as they get older since they do have it pretty good BUT i also want them to appreciate all the good things that they have in their lives....and Memorial Day is remembering those men and women who have given their lives for this country....and although they think they know what "war" is....they don't really get it at this age...as much as they love drawing battle scenes and army tanks and army dudes!...note to self: spend more time talking with the kids about why we celebrate the holidays we do....

....onto the food...instead of doing red, white and blue....decided to go with some camo desserts in honor of those who have served and those currently serving for the great US of A....

...i have found this whoopie pie recipe always works well and is pretty much fool proof...i made 2 batches....one chocolate (as is)...and then one i omitted the cocoa powder (replaced with just flour) and tinted the 2 green camo colors....

to get army green mix a little brown in the regular green

...then pipe a little of each color into circles....i did brown first, then green, and army green and dot with some more brown...or experiment to see what order you like better


...the filling is also the fluff recipe filling with about 2 tablespoons of cocoa powder added in as well


...the chocolate filling was great in these...although i'm not positive people knew what they were when first looking at them and i found myself constantly saying..."they are camo you know for memorial day"...!


 ...and i will let the picture say the rest...


....and take a moment to say thank you in your own way...however simple that may be.....
