Cupcakes from Barbados!

Just had a beautiful 7 day trip with great friends to Barbados last week....and of course I scoped out the cupcake situation there...which by the way, is not much---apparently not big cakey eaters there....or may be the 90 degree weather with 100% humidity and icing don't mix...!

These I found in a convenience store at the airport and were home made (go figure!).....they don't look so great but they tasted pretty good! Icing was a little sweet but the cake was not too sweet at all....but may be it was the beer chasers that made them so tasty!



These were in the local supermarket...not great but good for not having had any sweets in like 2-3 days! The cover said they were made by Foster's Bakery of Barbados. Tried googling them but their website is under construction.

I think I am "forced" to buy these!


Did I mention we have star wars freaks living in the house...I wish they sold the icings to go with them.....! Williams-Sonoma you think of everything that Pottery Barn does, hmmmm, wonder why?! They also have pancake molds as well....

The oldest's request for his 6th birthday....Iron Man

....which at first seems like a relatively easy request....he actually wants an Iron Man head...not full body...it sounds good in theory, but I've done the head cake thing before, and as a reminder....


you can end up with dead muppets....or in this case.....


old man Iron Man....not good. This one is going to need some more research.....maybe I can talk him into a pencil cake, that's cool right?

Happy Mother's Day to me...! (and the other moms of course!)


Decided to make up a batch for us since 1) finished my cardiovascular final last nite (yay) 2) the yankees kicked the crap out of the sox (even after a rain delay) 3) it's mother's day tomorrow and I have great kids. Life is good.

Tried a new icing and although it was tasty, it's not my fav, you can see the butter seems to be melting out (not too bad for these "sprinklesque" cupcakes as it kinda looks like gold flecks in the icing but it's too soft for piping really). I may have not waited long enough for the parts to cool before mixing. Oh well, live and learn.



Some of the kids presents...shanna helped the little's make the cards on the bottom....very cute, and jack's gift made at school (pretend the marigold is not on its way out!). Happy Mother's Day to all the kick arse mom's out there.
