Beet Zucchini & Carrot Naked Layer Cake



If you add veggies to cake then that makes it healthy - right? 

If so I have the healthiest cake ever for you.  Its got all these cool vegetables in it: 

beets, carrots AND zucchini


It's pretty much like carrot cake but swap out the carrots and add in either shredded zucchini or beets.  You could add them all into the same layer cake too - but I wanted separate layers.


Why you ask?!! Well since you asked:

1) I wanted to see if you can taste a difference in the veggie layers (you can!)

and 

2) I wanted to have distinct layers and colors when you slice into the cake (because I thought it would look pretty and it does!)


Also I wanted to do one of those minimally frosted naked cakes so you could see some of the layers through the frosting.  I used my new Russian piping tips to add some cream cheese frosting flowers on top.  Nice and simple.

I did another post on them here raving about how easy it is to pipe flowers with them.


I love how the layers came out and that you can see the different veggie layers.  The cake was also so dang tasty.  I made it as a birthday cake for my sister - you know a much more grown up cake now that we're both 40+, I mean 29).  And it's healthy because duh, veggies! 

At least that's what we told ourselves as we ate another slice or 3.  And since its September its a great way to use up all your overflowing zucchini if you grow them - or they are super cheap right now in food stores locally.  


I'm not going to moan about how I can't believe summer is over already since I do that every year but I guess bring on the pumpkin! Actually pumpkin may be another neat layer to add to this cake too!

Beet Zucchini and Carrot Layer Cake
Ingredients
  • 1 and 1/2 cups sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 2 cups of flour
  • 2 teaspoons of cinnamon
  • 1 teaspoon of baking soda
  • 1 teaspoon of vanilla
  • 1/2 teaspoon of salt
  • 1 cup shredded carrots
  • 1 cup shredded beets
  • 1 cup shredded zucchini
  • 1-2 drops of orange and green food gel (optional to give the carrot and zucchini layers a little more color)
  • 2-3 cups cream cheese frosting
Instructions:
  1. Preheat oven to 350 degrees.
  2. Beat sugar, oil, and eggs in mixer.
  3. Add flour, cinnamon, baking soda, vanilla, and salt.
  4. Separate equal amounts of batter into 3 separate bowls.
  5. Stir in shredded vegetables into each of the bowls and mix until just combined.  Add any extra food color to each bowl (optional).
  6. Spray 6 inch baking pans with floured non-stick spray and pour batter into each pan.
  7. Bake for 30 minutes or until toothpick inserted comes out clean.  Let cool.
  8. Trim layers until they are even and same sized layers.
  9. Frost with cream cheese icing.
  10. Pipe flowers on top with icing.

Watermelon Angel Food Bundt Cake Plus more Bundts!


Is it really almost the end of summer??? I've been seeing lots of back to school pics on my Facebook feed so it must be that time again.  But as usual I'm not ready.  I've been crazy busy at my regular day job and feel like I haven't even started summer yet.  

And on top of that my oldest kiddo just turned 12 this month.  12!!! And my twins (the babies) are now 9.  9!!!!! Nine is big kid territory so I'm trying to really just enjoy time with them as much as possible (which usually means trying to pry them away from their electronic devices - although its been so hot its really hard to do anything outside these days).

Anyhoo, I'm finally back into baking again.  I took some time off this summer because I was just not into it, but I think I'm finally getting back into a groove.  

Since it feels like summer just got here, I thought something watermelony was needed.  This recipe is super simple and uses an angel food box cake to start it off.  A little dark green icing gives great contrast and a watermelon like look!


It's a light and airy cake with watermelon flavor - perfect for these hot August days.

Cat in the Hat Swirled Bundt Cake - Happy Birthday Dr. Seuss!


Hey there everyone! It's that time of year again to celebrate all that is Dr. Seuss! Not that we don't celebrate him all year round but his birthday is March 2nd and all across schools they tip their "hat" to him and celebrate reading and all that is Dr. Seuss.  You can see more here on Read Across America Day and also for tools and tips for schools in your area. 

And what better way to also express our love for his time enduring books than with a super fun and swirled Cat in the Hat cake? 


I love Dr. Seuss and all the books he wrote over his time. There are so many to choose from but The Cat in the Hat has to be our favorite.


There's just something about the fun blue, red, white and black colors of the book that make me smile every time we re-read the book.  Although I must admit that my kids (the twins are almost 9 and my oldest is 11 going on 35) have said Dr. Seuss books are starting to be too "babyish" for them.  Insert me crying profusely inside.  Stop growing up so fast dammit!


That said, they loved this cake - and they are hard to please with treats these days.  

I also recently got a new bundt pan, one that is full of whimsy and swirls! I knew it would be the perfect pan for a Dr. Seuss inspired cake.  This cake is very easy too since it starts with a box mix. Then the batter is tinted with blue, red, and black to match the Cat in the Hat colors.

I also added some homemade sprinkles to resemble the Cat's iconic hat. They were easy to make and added more fun to the cake.


Although the cake looks great, I was a little disappointed that the blue color on the outside wasn't as bright.  That's just me not taking the cake out early enough and it browned slightly.  But the inside was exactly what I wanted - fun swirls of aqua blue, red, black and white!


So bake up a swirly Cat in the Hat cake for your fav fans.

How to Make Dr. Seuss Swirled Bundt Cake

Makes 1 bundt cake (8-10 slices)
Total time: 60 minutes

Ingredients:

  • 1 box of white cake mix
  • red, light blue, black food colorant
  • 1 tablespoon of cocoa powder
  • 1/2 cup of white candy melts (wafers) for icing on top of bundt cake
  • For Cat in the Hat sprinkles: 1/2 cup each of red and white candy melts (wafers) and black food writer

Directions:

  1. Preheat oven to 350 degrees.
  2. Spray bundt pan well with non-stick flour spray.
  3. Prepare cake mix as per box directions.
  4. Separate batter into 4 bowls. Leave one bowl plain. Tint a bowl with blue and red color. Add cocoa powder to 1 bowl. Mix well and add 5 drops of black food color or until deep black is achieved.
  5. Add mixtures separately to 4 freezer bags. Snip an end of each bag and pipe the batter into bundt pan. Alternate colors until all batter is used.
  6. Bake for 40 minutes or until toothpick inserted in cake comes out clean. Let cool.
  7. Turn out cake onto plate.
  8. To make Cat in the Hat sprinkles: Add white and red candy wafers separately to 2 freezer bags. Microwave each bag in 20 second intervals until just melted. Snip a small corner end of each bag and pipe small lines of each color to make hat on parchment paper. Alternate colors ending with white brim. Let candy harden for 10 minutes. Peel from parchment and on smooth side add small black line with food writer.
  9. Pipe some of the melted white candy melt onto top of bundt cake following the lines. While candy is still melted add hat sprinkles.

The Ultimate Layer Cake - Made of ALL your Favorite Desserts


With so many desserts and dessert combinations around these days I'm constantly changing my favorite.  I mean so many cookies, brownies, cheesecakes, doughnuts and not to mention the red velveting of everything! #redvelvetallthethings


Plus every other day there is a new kind of surprise inside cake.  Filled, rainbow, ombre, designs, etc. AND you guys already know my love of mash-ups, so the logical decision was to make an ultimate mash-up - a layer cake with a bunch of everyones favorite desserts!


I brought this to a family party and it was totally eaten up! I think there's enough in it to satisfy anyone's sweet tooth!

Rainbow Candy Cane Topped Sugar Cookie Cake and Cake Bites


Hello 2015!! Did you have an awesome New Years?? We had a great time away this year on a ski/snowboard vacation up in Maine.  My twins are now 7 and my oldest kiddo is 10 so trips are very much easier now then when they were younger when eating, sleeping, and pooping consumed pretty much everything. We are trying to enjoy every second with them before they don't want to hang out with us all the time.  I still take a moment when they call me mommy - it's so rare these days.   Mostly they yell "MOM" at the top of their lungs because they need or misplaced something, so being called mommy is a little present to me these days.  

And speaking of little presents, here's another little one for you all.  A sugar cookie cake topped with lots of crushed candy canes!  You know how you are always left with a boatload of candy canes after the holiday season? Well use them up in some fun treats.


Top a sugar cookie cake with homemade vanilla buttercream frosting and a rainbow of candy cane colors.

AND

If you have leftover crushed candy canes (like I did!) you can coat some cake bites with them.


These are super easy because its just the cake bite/ball mixture (I used chocolate cake for this) rolled into balls then coated in the crushed candy canes.  No dipping in candy melting wafers.  Well you could, but that's my least favorite part of making cake bites so I skipped that step.  The candy cane was plenty to give it a little crunch and additional texture.

Minecraft Creeper Cake and Character Peeps Pops


Is Minecraft still a favorite game of your older kiddos?? It still seems the soup de jour for my 10 year old.  Last year I did a Minecraft Cake and Rice Krispie Treats and Minecraft was requested again this year as a birthday cake.   And because I can't resist a good mash-up, I threw in some Minecraft characters in Marshmallow Peeps form!


For the Peeps pops, coat bunny Peeps in some white chocolate or vanilla candy melt.  Once hardened add the color with some food gels in various colors.  I add a little gel to an art tray (only used for food).  To make "paint" add about 1/2 teaspoons of flavoring extract.  I used lemon extract.  


Then just paint on the colors to make the characters.  Minecraft characters are easy because they look pixelated so you don't even need to be an artist, just color in blocks!


Once you have the base colors on, you can add any accents (like eyes) with candy melt.


The Creeper cake is really easy.  Just bake up a square cake in your favorite flavor.  Add a crumb coat and using a ruler make even squares across the cake.  I used a knife to draw on squares (well as even as I could get them.)


Tint icing in varying shades of green, and just fill in the squares.  You can google a Creeper face to see where to add the colors.  Use black icing to do the features of the face (eyes and mouth, well I think they are eyes and a mouth!).  It really was very quick to put this together.  Buy black icing though, it's so hard to tint icing a deep black!


And there you go, a pretty simple Creeper cake and some Peeps Pops for your biggest Minecraft gamer.


What games are your kiddos into? We're always trying to find neat ones that also teach a little.  Minecraft is pretty cool as they do create some really interesting structures in the world.  A little bit like a 3D lego creation, but all pixelated.

Fresh Fruit Rainbow Cake


Is there anything prettier than a rainbow? OK - maybe there are prettier things, but I really love rainbows in all shapes and sizes.  (As if you haven't guessed that by now!) And I especially love all those rainbow treats and cakes all over the place these days - they always make me smile.   That said, I also like to experiment with getting pretty colors au natural.  Fruit works great for that in so many ways - and bonus it's way healthier than cake!   


So I made a rainbow layered "cake" from fresh fruit.  An all natural rainbow, that's pretty and tasty too.  Try it as an alternative to cake, or in addition to cake!

Star Wars Bundt Cake - Happy May the 4th Be With You Day!


Happy May the 4th Be With You aka Star Wars Day! 

You all are probably all to aware that we have huge (I mean HUGE) Star Wars fans in the house.  I can't tell you how much SW stuff we have, but lets just leave it at a lot.  And we can't just not celebrate the official un-official Star Wars Day.  So I made a cake.  A STAR WARS BUNDT CAKE!!!


AND because I love you all, I put YODA in the CAKE. 

OK in any other context that's a weird and creepy statement - so I'll just let you look at the cake!


I hope you can tell that's Jedi Master Yoda.


1) Because they are way cool
2) They were also on sale for half off
3) Yoda is da bomb (do kids still say that?)


Start by baking a tinted green boxed cake in a jelly roll pan.  Once cooled, cut out the shape (in this case Yoda heads) from the cake with the cutter.


And you get a bunch of Yoda heads.


Next, mix up another boxed cake mix (or your fav homemade cake recipe).  I used chocolate, because the official Star Wars cake flavor is chocolate.  Well maybe not but it should be.  Add a little of the cake batter to the bottom of a greased bundt cake.  Then add your cut out shapes (upside down so when you flip the bundt over, the shapes will be right side up).  Try to keep them as close together as possible.  Then cover with the rest of the cake batter.  

Bake at 350 degrees for about 30 mins.  


Once cooled I iced with this icing and added some star sprinkles and blue tinted non-pareils, which were cool, but I thought it needed something else.  So I made some tiny light saber sprinkles.  

LIGHT SABER SPRINKLES!


They are made from blue, red, and gray candy melt.  (You could also use royal icing too).  Just pipe small lines with each color, and add some more black or red dots with candy melt as accents.  Once the candy hardens, sprinkle these on top while the icing is still wet.  

I couldn't wait til' the 4th to cut in.  


Yay!  A Star Wars Yoda Inside Bundt Cake!


And did you see they announced the cast for the new movie due out in 2015? Woo! Me and the other gagillion SW fans will be hoping for good things (and maybe a little cgi for Han, Luke, and Leia!)
