Lego Minifigure Healthy Energy Snacks - No nuts or refined sugar


One of my new years resolutions this year was to eat healthier - as I'm sure many of you are trying to do in 2017.  The problem is, I have a major sweet tooth (hence the blog) and I especially need a little sweety sweet at the end of the nite after dinner.

After doing some googling and a lot of pinterest searching, I found my latest obsession. 

Energy balls!


I know it sounds weird and funny at the same time, heck I don't even like calling cake balls - cake balls.  It just sounds wrong to me - but semantics aside, I love me some energy balls! They are perfect little sweet snacks.  Usually bite sized for some on the go healthy treats or post-workout energy boosters and made with all sorts of combos of the good stuffs for you - protein, no refined sugars or preservatives.  And many recipes have all the trendy foods like chia seeds, spirulina, flax seeds, hemp - pretty much whatever the current healthy food of the day is - you can toss into an energy ball.


I've made so many batches over the past couple of weeks.  They are just perfect bite sized little treats and I love the recipe I use especially when rolled in a variety of coatings to mix the flavors up a bit.  Many of them use nuts or nut butters but since 2 of my kids are allergic to nuts the recipe I have below is nut free.

AND
I found a way to make them even more fun! Add the mixture to silicone ice cube trays.  Here I used one of my favorites - a Lego minifigure ice cube tray mold. 
I left some apricot energy ball mixture plain then tinted some with powdered freeze dried raspberries and blueberries to give the Lego men colors. 


You can also use an energy ball recipe and not bother with the tinting.  You still get super cute little snacks!


Or use any silicone ice cube mold.  Once you pack the molds, freeze them for about an hour then pop the energy bites out for some super fun sized snacks! I bring them to work with me for an after lunch treat.


I've used the ice cube trays a bunch of times before when making sweet treats and I'm always looking for new ways to use them.  And although my hubby told me these guys looked a little like Dead Pool after his experiment to rid him of his cancer - I still think they look super cute!


Like I said I cannot get enough of these energy bites and I've been making a batch a week to bring with me to work and for after dinner.  I actually do think they make cute treats too.  Pack a bunch up for your next party or get together. 


 See perfect little sweet and healthy treats. And just maybe in fun forms you can get your kiddos to try them too!


Lego Minifigure Energy Snacks
Ingredients
  • 1 cup dried apricots
  • 1/2 cup unsweetened coconut flakes
  • 1/4 cup raw pumpkin seeds
  • 1 and 1/2 tablespoons coconut oil
  • 1/4 cup freeze dried raspberries
  • 1/4 cup freeze dried blueberries
  • Lego minifigure ice cube tray
Instructions
  1. Add 1st 4 ingredients to a food processor.  Blend until ingredients are well chopped, moist  and sticks together (you can roll it into a ball with your hands).  If too dry add a little more coconut oil until its the right consistency.
  2. Divide mixture into 3 bowls.
  3. Crush raspberries into powder and add to one of the bowls.  Mix well.  If the mixture seems too dry add a tad more coconut oil.
  4. Crush blueberries into powder and add to one of the bowls.  Mix well.  If the mixture seems too dry add a tad more coconut oil.
  5. Add the yellow mixture to the head section of the ice cube tray.
  6. Add the red mixture to the body section of the ice cube tray.
  7. Add the blue mixture to the leg section of the ice cube tray.
  8. Once all colors are added - add additional as needed to make sure the sections are packed well.
  9. Freeze tray for an hour then pop energy bites out of the mold.
  10. Refrigerate if not eating immediately - you can also freeze them and take with you as needed.
Prep time: 45 minutes Yield: about 20-25 energy bites

Lego Themed Valentines Day Cards and Candies



You guys know my love and my kids' obsession love for anything Lego related right? I mean I've made so many treats that I have a Lego Themed Page!  We probably have hundreds of thousands of Lego pieces, who know probably millions, but the kids really do love them and create some amazing things with them.  With Valentine's Day coming up I couldn't resist doing a fun Valentines Day treat again.  

Minifigure Lego guys and bricks made from candy to go along with some cute v-day printables.  I loved adding the heart sprinkle to them!

Back to School Graham Cracker Snacks - and Other Lego Themed Ideas PLUS Giveaway


Hey Everyone! So it's that time of year again when I constantly ask "Where the heck did the summer go!" I woke up today and it's even a little chilly outside.  Did you ever think you'd be longing for the hot and humid days of summer? It feels like we hardly had any and I most def am wishing for more summer.

And it's amazing that in my FB feed, there are so many 1st day of school pics already.  My 3 kiddos don't start until September after Labor Day, but that's really only a couple weeks away.  Please time, please SLOW DOWN! 


OK time won't slow down, I get it, that's fine - so in protest I'm celebrating every single day with treats.  Well maybe not every single day, because I have a day job and all, but how about something to get the kiddos excited for school? And if Lego won't get them excited (at least if they are like my kids), then I don't know what will.  Make some edible Lego inspired back to school snacks - all you need is some chocolate candy wafers and graham crackers.  

Directions for assembly are easy:
  1. Make your candy minifigs (see tutorial here)
  2. Open a pack of graham crackers and break into squares
  3. Using more melted chocolate, attach minifig to graham cracker
  4. Using more candy melt, write phrase on squares (put candy melt into zip lock bag, microwave until melted well, snip an end of the zip lock bag and pipe)
  5. Add a contrasting color candy melt around the border of the graham cracker (just to neaten them up, not needed of course!)
  6. Add heart sprinkle onto lego minifig

The Lego Movie - Minifig Cookie Pops


So I'm assuming my kids are not the only ones excited for The Lego Movie opening this Friday!  Lego can do no wrong around this house, and I think we've spent a small fortune on Lego sets.  But whatever, the kids love them and they are super creative with them.  Right now both boys want to work at Lego as designers - or as video game testers (yeah, get in line kiddos!).


Well to support their growing obsessions even more, I made them some mini cookie pops for the new movie.  I've posted before about using my mini gingerbread silicone pan here for mini superhero gingerbread men.  So these were done was pretty much the same way, except I used a sugar cookie mix and added a little more detail.  

Here are some of the main characters:

All the detail is done with Wilton candy melts.  I have them in pretty much every color, and then just mix up any colors that Wilton doesn't make.

Here are some of the super heroes! (I'm not sure why Superman is sad and The Flash looks like he just had plastic surgery.  I did them all pretty fast!).  

Wonder Woman and Green Lantern are also in the movie (among others!)
And some of the other characters.  There are so many in the movie that it would be almost impossible to do them all!

And I threw in a regular minifig dude just for fun.  These are really easy and all you need are the yellow, red, and blue candy melts.


The trailer looks really good.  And some big names as voices.  All the Wills - Will Ferrell, Will Arnett, Will Forte, Morgan Freeman, Jonah Hill (what isn't he in these days?), Liam Neeson, Charlie Day.  Even some Star Wars oldies, Billie Dee Williams and Anthony Daniels!

Rainbow Lego Men - Frozen Pudding Snacks


So who loves Lego?? I think I've said it a million times but we've definitely got lego freaks living here.  Lego, lego (lego) and more lego.  Apparently we just can't get enough.  We have hundreds of minifigs around the house, we could populate a country with minifigs.  That's either amazing or pretty sad (depending on your perspective!)

And I've made mini edible lego guys like a gagillion times too.   My goal is to use as many different foods as possible to get 110% out of my silicone ice cube mold! 


These guys are are made out of vanilla pudding.  But you can also make them from candy melt or yogurt too.  The only ingredients used for these little dudes are a box of vanilla pudding, some food coloring, and a lego minifig mold (I got mine at a Lego store, but you can order them online too).  Mix up the instant pudding, separate into bowls, tint with coloring, and "pipe" into mold.


If you get really ambitious, you can go for the real lego dude feel by changing the colors for the shirt and pants.


The process is basically the same as described here for making these guys - except replace the candy melt with the tinted pudding.  Then freeze well (at least a couple hours).  You can definitely just keep it simple and use solid colors - tastes the same!


And you know what, if some break popping them out of the mold, who cares, they taste the same too!


Just eat them fast!


And you get some tiny little frozen pudding snacks for a unique summer time treat!  I get so tired of the kiddos yelling for ice pops this summer and this was definitely a fun change for them.


You could even use other ice cube trays or molds for this and change it up by using other pudding flavors.
