Sweet Potato and Pumpkin Hash Brown Waffles

Are you still in your food coma from Thanksgiving?? Or maybe you've been Black Friday shopping all day?? Well I hope you are able to relax and enjoy a bit this long holiday weekend (in the US anyway, outside the US - Happy Friday!).

And if you have any leftover sweet potato, pumpkin, and/or cranberries, maybe you can make these fun waffles for a yummy brunch this weekend.

More savory than sweet, they are kinda like Thanksgiving day in waffle form!

Triple Pumpkin Beignets

I told myself I was banning making any pumpkin stuff this season since there is obviously an overload of pumpkin and pumpkin spice on the market.  But you know I honestly love pumpkin everything!

So I caved and made some triple pumpkin beignets. To me beignets taste like part doughnut and part funnel cake and are best served warm with powdered sugar.   Triple pumpkin because these little fritters are 1) pumpkin shaped 2) there's pumpkin in the dough AND 3) there's a little pumpkin spice pudding inside them. And please, whatever you do, don't forget to sprinkle with lots and lots (and lots) of powdered sugar!

See all of the pumpkiny details here at SheKnows

Happy Halloween Eve!

Cranberry and Pumpkin Mini Reindeer Cheesecake Cups

Since it is officially the holiday season, I sometimes feel compelled to make stuff with cranberries or pumpkin.  I mean it's everywhere! So these are an attempt at something a little different for me - cheesecake. And using real cranberries but canned pumpkin, well because I'm not that into pumpkin to go from scratch!

Start with the cranberries to make a super yummy cranberry sauce.  I had this on toast on it's own, so even if you don't like cheesecake, make the cranberry sauce!

Cranberry Sauce (adapted from Design Love Fest)
6 ounces of fresh cranberries
1/2 cup of sugar
1/2 cup of orange juice
1 and 1/2 Tbl vanilla
3/4 tsp nutmeg
1/4 tsp cinnamon
Heat all in a sauce pan until cranberries pop and sauce thickens.  Let cool.

But if you do make the cheesecakes, make them with a gingersnap crust. It's super easy, crunch up about 3/4 bag of gingersnaps and add 1 stick of melted butter to the gingersnap crumbs.  Spoon about 1 tablespoonful into cupcake liners, and press it down well.   Bake at 350 for about 8 minutes.

Recipes can be found here for the cranberry cheesecake here for the pumpkin cheesecakes.

Once they are cooled, peel the liners off them if you want to show off the look of the cheesecakes.  (which kinda remind me of Reeses peanut butter cups).  You can also chill them in the fridge.

I mixed some of them up too, and did 1/2 cranberry and 1/2 pumpkin.

I like seeing layers in foods, especially different colors (I know weird right?) so wanted to see what this would look/taste like.  Actually very tasty!  Neither the cranberry nor pumpkin are overwhelming so it went well together, especially with the gingersnap crust.

And of course I couldn't just leave them plain so I dressed them up a little for the holidays.  I've seen these simple reindeer cookies from Meet the Dubiens and thought I could use that idea to cute'n these up.

Hope everyone had an awesome turkey day! AND if you have any leftover cranberry sauce or canned pumpkin maybe make some of these little reindeer cups.

Cereal Treat Pumpkins

Does anyone else really love the General Mills Monster Cereals besides me?  I don't know why, they are all sugary and silly, but there is just something about them.  I don't let the kids eat them for breakfast, but making desserts from them is totally acceptable.  A couple years ago I did some different treats with Frankenberry, Boo-Berry and Count Chocula.

And look what I found the other day, a new monster cereal Fruity Yummy Mummy! WHAT??! Well apparently after doing some google research, this was available back in 1989, but discontinued in 1992.  It kinda tastes like an orange creamsicle.   Go figure, I thought I knew all the Monster Cereals.  There was even one called Frute Brute - which was discontinued back in '82. (See not only do you get fun treats on this blog, you also learn too.  OK maybe you'll be answer a random Trivial Pursuit question. You're Welcome!)

Love how the cereal looks like little pac-man ghosts!
I figured an easy treat to make with them would be cereal treats.  Use the regular Rice Krispie Treats recipe, and just substitute the new cereal for the Rice Krispies.  And cut into squares.

And although they were good, they needed a little something more.  Add a little green candy melt and a piece of pretzel stick, and you get Cereal Treat Pumpkins!

Ok ok ok, I know they are square pumpkins and all and could possibly look more like peaches, but I'm sticking with calling them little pumpkins! Either plain or dressed up, they are fun little treats.

And if you are really interested, looks like Target has all the Monster Cereals this year in their retro packaging! It's like it's 1980 all over again! I'm ready to bust out some metal roller skates and neon friendship bracelets.  Boo-Berry has always been my fav, but must try the Frute Brute!

Fun, right?? Anyways, I love this time of year and all the fun Halloween Treats showing up everywhere.  You all are so creative!  Have a great weekend!

a whole bunch of fudge...!

so although i really wanted to start 2013 off with a healthy treat...i haven't gotten to that yet!...so you get a whole lotta fudge to kick off the year....

this is from the holiday season and made for all the kid's teachers....i think i was making fudge every other nite for all of December!...good thing they were all really simple to make....

cranberry: 1 can (14 ounces) of sweetened condensed milk, heat on stove top and add 1 bag of white chocolate chips (12 ounces), and dried cranberries (add about 1/2 cup of dried cranberries in a food processor and chop nice and fine); add cranberries to fudge while it's still warm, pour into 8X8 baking pan, let harden and cut into shapes.

lemon: super simple, 1 can of store bought lemon frosting added to 1 package of melted white chocolate chips (12 ounces); add to pan and let set and cut

cinnamon: 1 can of store bought vanilla frosting to 1 bag of cinnamon chips

red velvet: 1 can of store bought chocolate frosting, 1 bag of chocolate chips, 2 tablespoonfuls of red coloring gel (ok yeah it's really just chocolate fudge, but i cheated and called it red velvet!)

pumpkin spice: 1 can of sweetened condensed milk (14 ounces), heat and add 1 bag of pumpkin spice hershey's kisses (unwrapping them was the longest part!)

mint chocolate: 1 can of store bought chocolate frosting to 1 bag of mint chocolate chips (added some green tree sprinkles on top for fun!)

green tea: 1 can (14 ounces) of sweetened condensed milk, heat and add 1 bag of white chocolate chips and 3 tablespoonfuls of green tea matcha

fruit loop: 1 can of store bought vanilla frosting to 1 bag of white chocolate chips; add in 1 cup of crushed fruit loop cereal, and some rainbow non pareils on top

...since i made mine ahead of time, i wrapped and froze each large square of fudge and took them all out the day before i was making the treat boxes to cut and divide them up....

.....go get your treat boxes on sale post the holiday season!...the fudge made with frosting is very sweet and my kids loved this kind (surprise surprise!)...the fudge made with sweetened condensed milk is also sweet but also more creamy in texture....my kids are mint chocolate fans so that was their fav but if i had to pick one it would probably be the green tea or the cranberry....!

the cranberry would even be great to make for this valentine's day....maybe cut out some cute little hearts...right??

...and you get some super simple to make fudge in a bunch of flavors--for some very special teachers and staff at the kids' school....i can't say enough about how much our teachers do each and every day for our kids, and a little treat here and there to say thank you is the least i can do....

...hope your 2013 is off to a great start! I'm sure all the Valentine's Day stuff will be showing up soon....i think i spotted some candies already in stores, so get ready!

Have an awesome week and thanks for stopping by!

chocolate and pumpkin spice acorns....!

...so the fall weather is finally here! ....and the leaves are falling and we've got a ton of acorns all over the yard (which also means a ton of squirrels running around too!)....

these edible acorns were requested for a party based on these....they are so simple and made with hershey's kisses---in chocolate and pumpkin spice (i think there is pumpkin flavored EVERYTHING now....who knew they even had pumpkin spice kisses???)

...instead of crackers on top (couldn't find a good flavor combo)...used mini nilla wafers which were just the right size for an acorn cap! Attach with a little melted chocolate....let chocolate harden and use a edible food writer to add some detail on top of the cap...then add another little bit of chocolate on top for the "stem"

and you get a bunch of fun and all edible acorns to feed to your "squirrels"!....and like i said, they are super simple to put together....the part that takes the longest is unwrapping all the kisses!...and you can always add to some cupcakes or just eat them by the handful (not that i do that sort of thing!)

the chocolate and nilla wafer is a really great combo and if you like pumpkin spice (ala a pumkin spice latte) then you'll dig the pumpkin spice acorns too!

Don't forget online blogcon is coming up next week....hope to see you there!

"healthy" carrot and zucchini cake bites...!

...so i'm calling these healthy because they have veggies in them!....and they are made from this carrot and zucchini bar recipe from six sister's stuff, which is a healthier recipe when you compare it to others (everything is all relative right??)....AND it's a cake bite (i refuse to call them balls) in the sense it's a bite of cake but without the frosting added to the cake mix or the shape dipped in chocolate/candy wafers as a coating....and yeah i know some would say this is not really a cake bite then a la bakeralla...which is why i'm saying it's a "healthier" version....that's all!

...bake up the bars as per the recipe...and let cool.....because of all the zucchini and carrots....it's also a very moist cake (which is key here)....so no need to even add any frosting to the mix....just squish it up and shape...i added some cake to an ice cube mold....i get mine from dollar stores during the different holiday seasons for super cheap....just make sure you get it filled well and then push down so you fill in any air pockets and to get the design on the cake bite (you could also just roll into bites or form these into shapes as well) and if you really wanted you could add the icing and frosting too...i'm sure it would be tasty with some cream cheese icing added in but i was going for kinda healthy--at least healthier!

...the trick with these.....FREEZE them for a bit so you can pop them out of the mold and keep the shape...also did some flower shapes with another metal pan i have....definitely freeze the pan once you add the cake since you have to pop these out using a knife which can nick some of the shape....

...they popped out of the silicone mold very easily....add some pretzel stick pieces as stems for the pumpkins....and i melted some green and chocolate candy wafers to add the rest of the pumpkin detail....(thought some needed a jack o'lantern face!)

...and see they do have some candy melt topping...so in essence it kinda fits the criteria for cake bite!

....and you get some really yummy and "healthier"cake bites to welcome in the fall weather!..they were really moist and kinda like a mini carrot cake

....i'm not totally sure if they would hold up to making cake pops---they might but i didn't try them... would definitely make sure they were frozen over nite if i was going to dip them in chocolate or wafers like regular cake pops....

anyhoo, hope you like them and are getting ready for the fall weather in the US that's coming! it really is one of my favorite times of the year....
