Craft Beer Cereal Treats for Oktoberfests


This treat is for the grown-ups.  I made some craft beer cereal treats - meaning rice krispies treats made with BEER!


There's beer in both the treats and the glaze.  And if you like craft beer, there is Ballast Point's Grapefruit Sculpin in this recipe.  Even though there's grapefruit in it - it's not too fruity just a really good IPA (India Pale Ale) that we tend to keep around the house a lot! 


You make the treats pretty much the same way with butter, marshmallows, and rice krispies cereal.  The beer thinned the marshmallow mixture a bit so the treats were a little less sticky than regular treats.  I've adjusted the recipe below to try to account for that.


Mix some powdered sugar with a little of the beer to make a tasty little beer-y glaze.


And top with some draft flavored jelly beans! Who knew they made beer flavored jelly beans? Well they do - so I had to top the treats with some.  The beer flavor does come through, but its not overly beer-y (is that a word?).  


Drizzle the glaze on top, add some jelly beans and cut into squares.

Beer Flavored Rice Krispies Treats recipe

Makes 20 treats (depending on how large your squares are cut) 

Ingredients:
    • 1 bag of mini marshmallows (plus an extra 2-3 cups)
    • 6 cups of rice krispies cereal
    • 3 tablespoons of butter
    • 1/4 cup of your favorite beer (use a flavorful beer, this recipe used Ballast Point Grapefruit Sculpin IPA)
    • 2 cups of powdered sugar
    • 2 tablespoons of same beer
    • 1 cup of draft beer flavored jelly beans

Directions:
  • Melt butter over medium heat in a large stove top pan.
  • Add bag of mini marshmallows and beer and mix.  Add extra marshmallows (1 cup at a time) until marshmallow/butter/beer mix is just sticky.
  • Mix in rice krispies.  Mix until all cereal is coated with mixture.
  • Add mixture to a 9X12 baking pan that has been sprayed with non stick spray.  Press down until compacted together.  Turn out onto parchment paper or similar paper.  
  • For glaze: mix powdered sugar and remaining beer.  If glaze is too thin, add more powdered sugar.
  • Drizzle glaze onto treats.  Add jelly beans (optional)
  • Cut into squares and serve!

Green Beer Bread


So Saint Patrick's Day is this Monday! Woo! I pretty much love anything green, even green food which is really weird since green food can = green mold which = pretty gross.  But let's pretend green mold does not exist for the purposes of this post.  

I think my love of green stuff started when I was little and the local supermarket had green sandwich bread around St. Patrick's Day time.  Does anyone else remember that? Loaves of pre-sliced green bread like white wonder bread but green?? I can't find any pictures of it so I'm starting to think I imagined the entire thing.

Anyway, St. Patrick's Day is all about green stuff (obvi) so green food is a must as well as green drinks! So I figured I'd throw them both together in some green beer bread.

Start with your favorite beer.   And just like when you cook with wine, use a decent-good beverage if you want a good final product.  Hubby always has some excellent beers on hand so I snagged one.   Nugget Nectar, an IPA from TRÖEGScraft brewery based out of PA (great beers and great artwork on their labels!)

For recipes, I went to my friend Google, and found this one for 5 ingredient beer bread by Half Baked Harvest.  So simple and it looked really tasty.  In place of the brown sugar, I substituted 1/2 cup of regular granulated sugar.  I also added a little green food color to the beer before adding it to the mixture (see pic above).


Add the green beer to your dry ingredients and mix.  But don't over mix. The dough will be a little sticky.  Add to a pan (I also added some green non-pareil sprinkles just because I could) and bake at 350 degrees for about 40-50 minutes.

Add a little pat of butter and you're all set.  

If you've never had beer bread before, it's something you have to try.  The alcohol will cook off during the baking process and the baked bread comes out really nice - moist and slightly sweet (but not super sweet).  A nice little treat to bring to a party 1) because it's really tasty and can be eaten alone or as a side with food and 2) it's super fast to throw together.  


And I know not everyone will look at this and go "Yum, that green hunk of bread looks mighty appetizing, give me the entire loaf!", but if you are weird like me and love all green foods, you might.   Or maybe you just like seeing all the fun green stuff on St Paddy's day, either way I hope you like it!

Oktoberfest Beer Donuts



So I'm putting a pause on all the Halloween stuff for a bit.  I made beer donuts to celebrate the Oktoberfest season! I don't really need a season to put booze into stuff.  I kinda like to experiment with sweets that way.  I've tried beer jello, beer cupcakes, beer blondies, and now beer donuts.

There is beer in the donut batter and beer in the glaze.  You can probably use any beer you like for this (please don't use Bud Light!).  My hubby has quite the obsession with craft beers, so at any time we have a few 6 packs in a variety of beer styles squirreled away.  I used Ballast Point's Sculpin which is an India Pale Ale.  Side note: Did you know a sculpin is a fish with teeth and venomous spines? It also is the only fish that produces adrenaline? I learned that from beer, go figure.


I found the recipe over at Foodista which sounded relatively foolproof.  Once you get all the ingredients mixed up, add the beer to the doughnut batter, which makes it nice and foamy!


Oh and these are baked not fried, so let's pretend they are way healthier for you.  


Baked up and right out of the oven, they are super tasty.  There is a subtle beer flavor too, but since many beers these days are flavored with orange, lemon or other spices - it totally works in baked goods.  This recipe also has fresh nutmeg (my fav!) and cinnamon so it really is a nice Oktoberfesty treat.


The original recipe just rolled the doughnuts in powdered sugar BUT if that's not enough beer flav for you, go ahead and some to a glaze.  

Beer Glaze:
6 Tablespoons of your beer of choice
About 1 and 1/2 cups of powdered sugar

Mix well.  Add more sugar or beer to get the dipping consistency you like.


And who doesn't like a donut with some glaze and sprinkles?  So of course I added some to these (totally optional if you don't but that's just kinda weird :)


Eat one and watch the latest Simpson's Treehouse of Horrors! That would be a total win-win.

blue moon beer blondies & cupcakes....!


....so since cinco de mayo is coming up! what a fun holiday and i love how lots of beer and alcohol infused foods start showing up all over the place this time of year....

....and it's also the season for spring like beers....so why not make some beer blondies and cupcakes?!


...this is another super simple recipe that i found here which was inspired by this recipe....it called for 2/3 cup of light colored beer so i used blue moon which is a belgian style wheat beer (you could also use corona or similar too)....


...i also replaced the lemon and lime zest in the recipe with orange zest since this beer has flavors of coriander and orange (so it fits in nicely with flavor)...


.....for the icing i also used the beer for the liquid....add confectioners sugar to about 1/3 cup of the beer and the zest of 1/2 of an orange....


....add enough sugar to get a good glaze consistency...


....and i've made blue moon beer cupcakes before here from scratch.....but these are super simple since i had frozen vanilla cupcake batter that i wanted to use.....just bake up normally then "inject" them with about 2 teaspoons of the beer! (you could also brush on while the cupcakes are warm and let the beer soak in)...the frosting is left over swiss meringue buttercream....i actually experimented and added a little beer (maybe 1/8 of a cup) to about 2 cups of this frosting...it made it too liquidy so needed to add some confectioners sugar to firm it up


....cut up the blondies into squares once the glaze has set.....and you get some really tasty beer blondies! (these are actually more like a tea cake versus dense like brownies or blondies---which actually was a nice surprise - very very tasty and moist!)


...and also some really simple beer cupcakes topped with swiss meringue buttercream with a little beer flavor as well and topped with some orange zest....adding the beer directly too the cupcake made them moist and the beer flavor is not at all overpowering.


 ....i am just getting back from a solo trip to amsterdam for work, so still recovering from that (what a beautiful city!) .....but definitely make one of these beer desserts for a grown up party....the cupcakes were good, but i have to say the blondies may be one of my favorite desserts to date!..thanks for stopping by and hope everyone has a super great week!
