Minnie & Mickey Whoopie Pies


I needed a break from all the holiday posts lately and also had a craving for some whoopie pies.  But instead of plain old boring ones I thought Minnie and Mickey ears would be fun.  I saw these whoopie pies awhile back that are Mickey and Minnie shaped but thought it would be neat to make 2 tone cakes for Mickey and to also use the batter to make little Minnie bows.  

Ever since going to Disney a couple of years back I got into all that is Minnie and Mickey - especially the ears.  They are so iconic for Disney!  

Sadly, my kiddos (11 year old tween and 9 year old twins) feel they are too "old" for Mickey and Minnie Mouse.  First this month they dropped the bomb that Dr. Seuss is too babyish for them and now they are also too old for Mickey.  

WHAT???!!!! 

I can't take it anymore.  Stop growing up so dang fast.  

As another example, I always make their birthday cakes every year.  The request from the 11 year old this year is for me to make a large single Cheeto puff cake.  No more "mom can you make me a fire truck" or "mom can you make me volcano or R2D2 or Iron Man or an Earth cake or even a Minecraft Creeper cake".  A CHEETO.  Come on!  So I refused and told him to come back in a week with a new proposal or to at least put a business case together for the Cheeto cake.  You know you have to teach them life lessons and all, and if you want a Cheeto cake - you need to sell the idea to everyone involved and get them on board.  If he comes back with a powerpoint slide deck with talking points you may see me posting a How To for a Cheeto cake!  


Whatever, I'm still going to make them cute Disney treats.  They can't stop me.  But if you also see more Minecraft, Terraria, Plants Vs Zombies, or You Tube inspired treats, you'll know why.  

So apparently these Mickey and Minnie whoopie pies are more for me than anyone else in this house- but that's fine too.  BUT if you are an AFOD (adult fan of Disney) or if your kiddos are still into Disney - make some today!

Silver Surfer Whoopie Pies



So as the annual tradition dictates, I made the hubster whoopie pies for his birthday this year.  Not just any old whoopie pies, Silver Surfer whoopie pies!


The Silver Surfer is his fav Marvel super hero.  If you don't know the back story, Silver Surfer started out as a herald for Galactus.   Galactus is the bad guy who eats world's energy- HE DEVOURS WORLDS.  That's a bad ass villian super power if you ask me.  Well Silver Surfer used to find worlds to be on deck for Galactus, but when he came to Earth and met the Fantastic Four - he had a change of heart and turned on Galactus.  

Anyway, the hubster has always been a huge Silver Surfer fan and still has his comic book collection from when he was in college.  My original plan was to buy him the first Silver Surfer comic (circa 1968) but I can't really justify spending the hefty price tag for it when it will probably be sitting in a plastic sleeve for years, so went with plan B.  (Although I have to admit Issue #1 looks pretty darn cool!)


Plan B was Silver Surfer themed whoopie pies.  They start like any other whoopie pie recipe.  I always use this recipe because it's so tasty and pretty fail safe.   Pipe and bake your "pie" circles.  


Once cool, add the text (or whatever your design) with melted candy wafers/melts.  You could use  melted white chocolate chips as well.


The silver is from silver color mist - which is like edible spray paint.  If you have not used this before, try it, it makes coloring some projects so easy and fast! (I don't get paid or product from Wilton, I just love the stuff and have it in most colors!).  Once the candy melt is hardened, spray the color mist on both whoopie pie halves and let dry.  


Add your favorite whoopie pie filling and serve.  


And as I mentioned, in place of birthday cake we do birthday whoopie pies!

Superman Whoopie Pies!


So it's whoopie pie time! Or as my kids call them "wumpie pies"!  Every year the hubster requests whoopie pies for his birthday instead of birthday cake.  Last year we did "devil dog" inspired whoopie pies and another year it was planet shaped whoopie pies.  I've also done some designed whoopie pies here, where you "decorate" the whoopie pie cakes before baking.  (I always love how this looks in the finished cake!)

For this year's birthday whoopie pies, I decided to use this technique and make some superhero inspired pies for the birthday boy.  The recipe is straight off the Marshmallow Fluff site.  It's the very first whoopie recipe I ever used and it's simple and everyone always loves them.


Put your batter in a zip lock bag, snip and end, and pipe your circle whoopie pie cakes.  Make a separate batch of the whoopie pie batter and leave out the cocoa.  I add the same amount of wheat flour to make up for not adding the cocoa.  Once batter is mixed up, separate into 2 bowls and add your food coloring.  Since I did Superman, I tinted half yellow and half red.  Put each color into a zip lock bag, snip an end and "pipe" the Superman logo.  Do the yellow background first.


Then add the "S" in the red batter.  You can use whatever design you like.  The batter is thick enough to keep the shape relatively well.


Bake at 350 for only about 7 minutes or so.  Keep an eye on them as you don't want them to brown.


Add the scrumptious marshmallow fluff icing/filling, and assemble your pies.  I also had some leftover tinted batter so made some mini vanilla whoopie pies too.


Even lettering works well with this technique, so I made a message for the birthday boy, who really is a kid at heart!


And you get some fun Superman Whoopie Pies to celebrate another year on this big blue ball.

In a world were there is such senseless violence such as the recent events in Boston this week and Newtown not so long ago, it really does give me comfort to know that my kids have a great role model in their dad.  He really is our real Superman around here.  Happy Birthday babe!  You're amazeballs.

memorial day camo whoopie pies....!


so it's memorial day...as i was trying to explain today to my 7 year old what a "memorial" is...i realized i need to do a better job about talking about holidays with the kids...they are more than just days off....and this one in particular is more than picnics and bbqs...we have a pretty good darn life
in part due to many fallen soldiers that have given their lives for this great country of ours....

i also realized explaining some things to the kiddos is definitely getting more difficult as they get older since they do have it pretty good BUT i also want them to appreciate all the good things that they have in their lives....and Memorial Day is remembering those men and women who have given their lives for this country....and although they think they know what "war" is....they don't really get it at this age...as much as they love drawing battle scenes and army tanks and army dudes!...note to self: spend more time talking with the kids about why we celebrate the holidays we do....

....onto the food...instead of doing red, white and blue....decided to go with some camo desserts in honor of those who have served and those currently serving for the great US of A....

...i have found this whoopie pie recipe always works well and is pretty much fool proof...i made 2 batches....one chocolate (as is)...and then one i omitted the cocoa powder (replaced with just flour) and tinted the 2 green camo colors....

to get army green mix a little brown in the regular green

...then pipe a little of each color into circles....i did brown first, then green, and army green and dot with some more brown...or experiment to see what order you like better


...the filling is also the fluff recipe filling with about 2 tablespoons of cocoa powder added in as well


...the chocolate filling was great in these...although i'm not positive people knew what they were when first looking at them and i found myself constantly saying..."they are camo you know for memorial day"...!

halloween whoopie pies (and Rutgers ones too!)....!

...yeah i know....more whoopie pies!....i've made them a few times already....some made with fall flavors....some made like the sun and planets....and some good old chocolate with buttercream....but these are super quick and made from a modified box cake mix....and the design is baked into the whoopie pie (not iced on top)....!

...start with your fav box mix then add 3 eggs, 1/2 cup of water and 1/2 cup of vegetable oil....and mix...i added the mix to a zip lock bag, snip off one end.. and pipe the pies onto parchment....(this lets me control the size of the circles better)....


...i had some left over vanilla cake mix (already mixed and frozen) so i thawed it and tinted some orange and left some un-tinted...add that to a zip lock bag and snip a small edge off to "pipe" on the halloween designs (or whatever design you want!).....you can leave 1/2 of them without a design since they will be the bottom of the pies....

.....then bake @350 for about 8-10 minutes....(ignore the weird color and date stamped onto the pics--it must be the camera and not the photographer... :)


.....then slather your favorite filling (cream cheese frosting, buttercream frosting, etc) in between....and you get some really cool whoopie pies for halloween.....!

...and since we have been season ticket holders for the past few years....also made RU whoopie pies for the Rutgers football game this past saturday.....!...go RU!


....just used the same technique....pipe some red tinted cake batter onto unbaked whoopie pies...then bake as usual....

.....and you get some really cool and tasty whoopie pies for halloween (or a football game!)

....a couple of tips...
  1. bake them a little extra if you are not sure...i took some out too soon and they were not firm enough when i tried to pick them up and they cracked a bit (not sturdy enough)...
  2. also for the tinted cake batter---you should really go with a whoopie pie batter (i just used a regular cake mix batter that i already had mixed and you know how some cake mixes get a little sticky on top after you bake the cupcakes (like it's really moist)?...well that's how some of the tops of the whoopie pies were...and when i picked it up the tops to add the filling, the tops stuck to my hand and peeled off (you can see it in the white one below)....
  3. go with a homemade whoopie pie recipe...i usually use this one...and it's simple and comes out great every time...but i wanted to try this cake mix one--and although it worked...the homemade kind is much better....

.....regardless they were yummy and the kids loved the designs....and did i mention the design is baked into the pies...!?!...you can do this for whatever occasion you like....halloween, thanksgiving, christmas, valentines day, 4th of july, pretty much any....wouldn't wedding whoopie pies with the couples initials be cool?...(and it's actually pretty simple to do)....!

planet whoopie pies....!


...so the request i got from the biggest kid in the house for his birthday last week was for whoopie pies but "something to do with space" (and by biggest kid i mean the 41 year old)....there are no simple requests anymore...like how about just a plain chocolate cake with some sprinkles...? nope...i get space themed whoopie pies.....so i pretty much got assigned a science project this week!

....started with a vanilla whoopie pie recipe.....or as my kiddos call them "whommpie pies"......i think i prefer to call them that from now on.....

....went with vanilla so i could tint them colors.....once the batter was mixed up...separate into bowls and tint "planet colors"---yeah i did google search "what are the colors of the planets".....but i figured the cartoon color representations are much better than the real things for this (so i know the colors are not really exact, but whatev they are whoopie pies!)...you don't even need to totally mix them well either and you get some streaky planet like marbling going on....


....plop some of each color and make circles (2 for each planet and the sun of course)...started with the sun, then did planet sizes in scale to that (well tried to anyway)....for some i swirled a couple colors with a toothpick after plopping onto the baking sheet...


....then bake @350 for about 10 minutes but keep an eye on them and take them out as soon as a toothpick comes out clean......


....filled with this from the marshmallow fluff site....and added a couple rings for saturn and uranus (made from candy melts)....my 6 year old had to tell me uranus had rings---he's getting way too smart too fast....and you get....planet whommpie pies!


...oh since earth day was on friday april 22nd...these may fit in as well!...


....and since chocolate whoopie pies are the big kids fav....made a plate of them too.....


...i sure hope you get simpler requests than me.....oh yeah my 6 year old also told me today he wants a standing jango fett (dude from star wars) cake for his 7th birthday this summer.....i am going to try again to talk him into a pencil shaped cake....it didn't work last year but it can't hurt to try.....next up the twins turn 4.....2 separate cakes for a party in may.....i think i'm in trouble from here on out....!

ps i really wanted to do pluto too but ran out of room....poor pluto....that's like sitting behind home plate at yankee stadium for all the past seasons then all of a sudden you are a bleacher creature...bogus.
