Mini Babka Breads - 6 ways

If you follow my Instagram you may have seen a bunch of babka bread over the past couple of years.  I got into making this neat swirled bread during COVID and still can't stop!

Not sure why but I love coming up with new flavor combos and waiting to see how they swirl when cut. 

This time I went mini sized!

I forgot I had some cute little baking loaf liners and thought they'd make great little babka bread containers.  

Start with your favorite babka bread recipe (see below) and once risen the first time, cut the dough into 6 equal pieces.

The rest is similar to any babka technique, roll into a thin rectangle shape and spread with your filling of choice.  

Below is filled with chocolate hazelnut spread

Roll up lengthwise into a jelly roll shape.

Cut in half and wrap each section into small babka loaves

Fillings include:

Funfetti - 
Honey, crushed vanilla wafer straws, white chocolate chips, and rainbow sprinkles 
(love the colors of this one!)

Christmas Fruit Cake -
Dried fruits soaked in brandy, apricot jam, and pecans

Peanut Butter and Jelly - 
Creamy peanut butter, spreadable honey, raspberry jam, and peanuts

Cherry Chocolate - 
Sour cherry spread and chocolate syrup topped with cocoa nibs

Carmel Apple - 
Carmel syrup, cinnamon sugar, diced apple, chopped walnuts, drizzled with more caramel syrup

Once they are rolled up, add to the rectangular loaf liners and let prove for 30 minutes or until doubled in size.

Bake only for about 15 minutes or until just browning on top (Thermometer should be 190 degrees)

Make sure to brush while still warm with simple syrup (equal parts sugar and water) to give them a nice shine.  Drizzle with any of your favorite syrups (like chocolate or caramel) to taste.

Babka Dough Recipe

1 package instant yeast
1 teaspoon vanilla extract
1/4 cup vegetable or canola oil
1/8 cup honey
1 egg
2 cups all purpose flour
1/2 teaspoon salt
1/4 cup warm water

Directions:
  • Mix yeast and warm water together and let sit for 5-10 mins
  • Mix vanilla, oil, honey, egg, and salt together
  • Add flour to bowl and add yeast mixture and mix until incorporated
  • Add the other ingredients and mix until incorporated
  • Turn out onto the counter and kneed until soft and pliable
  • Cover and let proof until doubled in size
  • Cut dough into 6 equal pieces
  • Roll each piece into rectangle (about 5X2-3 inches)
  • Add whatever filling desired (see descriptions above pictures) and roll lengthwise into jelly roll
  • Cut down center and twist each length around each other
  • Add to mini loaf liner and let proof again for 30 minutes
  • Bake at 350 degrees until internal temperature is 190 degrees (cover with foil if the top starts to brown)
  • While still warm babkas with simple syrup (equal parts sugar and water, heat until all sugar is dissolved)
  • Add any syrups/topping as desired

Coffin and Skeleton Mini Cakes


Only a week until Halloween! Are you ready? (and by ready meaning ready for another Halloweeny treat??


First off, have you seen the Cheetos Bag of Bones that Frito Lay has out right now? It's filled with white cheddar skeleton parts so you can build your own skeleton.  I searched down a bag and had to come up with something fun to make with them.


And if you have skeletons, you kinda need coffins right? These are made from a couple of things.  Cookies and creme sugar wafers make the basic coffin shape and the bottom of the coffin is chocolate graham crackers.  Cut into the shape you want and use melted black candy wafers (or you can use melted chocolate chips too) to glue the pieces together.


Once you have your edible coffins (now that's a weird word combo!), cut out a similar coffin shapes from a chocolate sheet cake.  I just did this by eye balling the size and trimming as needed.  Then frost with chocolate frosting.  You don't even have to be neat because it basically gets covered anyway!


Add some candies on top of the cake - not needed but it makes them more fun.  I used candy coated sunflower seeds in Fall/Halloween colors.  I use Sunny Seeds as they taste great and come in in so many colors and themes.


Then add your skeleton parts on top!


I never really thought I'd be crafting edible coffins - that just seems a little strange, but you know when you have edible skeleton parts handy, you have to fill a need!

mini neapolitan pancake cakes......!

...so i needed to take a break from halloween treaty treats....i'm kinda ghost and zombied out.....at least for a couple days.....and i also think i make more treats that may appeal to the y chromosome than the x.....so these are for my 4 year old girlie girl....mini neapolitan pancake cakes...!

...the other day the kids wanted pancakes....so decided instead of rainbow to do some vanilla, strawberry and chocolate....made with this stuff....


....just followed the directions for the pancake mix then separated into 3 bowls and added a generous squirt of chocolate syrup to one.....about 2 tablespoonfuls of strawberry quick to another....and left the other plain.....

....and you get really simple neapolitan pancakes...!...yum!...

....since i had a bunch of pancakes left over....and some leftover buttercream.....and everything's better with buttercream...right?......made some mini cakes with them.....

....i didn't ice between each layer....(although i did add a small amount of icing just to anchor the pancakes together).....i did do a quick crumb coat and then refrigerated before icing and decorating (just some of the buttercream tinted pink and piped using a wilton #2 tip).....

....and you get some mini neapolitan girlie girl pancake cakes....! ...pretty tasty and not overly sweet (since pancakes are not as sweet as cake layers....the buttercream made up for that tho!).....

simple mini tiered cakelets....!


...so after having a bunch of bundt cake left over from this post.....decided to play around and see what i could recycle from it...since it was too tasty to throw out or eat all by myself....unfortunately my kids like icing more than cake....so although they did like the birthday bundt cake....they would pick a box of nerds or a rocket bomb pop over a yummy slice of decadent bundt cake....kids, go figure.....

....i may have mentioned it before but i love anything colorful and mini and if you put them together...100 times better!

...i also love the look of those mini wedding cakes that were/are popular instead of an actual wedding cake or they have been used as favors.....here are some great examples!....but holy guacamole, they are so detailed and look like a boat load of time and effort....these mini cakes are a super short cut and although not as fancy...they are fun....!


....they are made from left over bundt cake (but you can use any cake for this)...slice up the cake into even thicknesses and use cookie cutters or whatever you have to cut out shapes in 3 different sizes.....


...and stack them....(i didn't even frost in between layers but you can if you think it's needed)....then add a little decoration with buttercream (leftover from another project)....and some large pearl non-pareils....and ta-da!....totally recycled mini cakes....they even got some oooohs and aaaaahhs from the 3 kidlets this morning too....yay!

....i also think these would be so cute for a girl-y birthday party....or a tea party....wedding or baby shower....it just depends on how you did the cake and tinted it...you could even boy it up and tint the cake like camouflage or just use really bright colors...(not that my boys didn't like these....as i mentioned the oooohs and aaaahhs....but to me they look like little wedding cakes...!)
