Frosted Dark Chocolate Loaf Cake with Heart Inside


Yay! It's that time of year again.  Nope not Valentines Day (although I know this cake looks all valentinesy).  It's the 6th anniversary of my daughter's heart transplant.  If you follow the blog, you probably know we celebrate her special heart day almost like another birthday because it is like a birthday!

At 8 months old, she was diagnosed with a type of cardiomyopathy called non-compaction cardiomyopathy.  This is a type of heart disease where the heart muscle is more spongy and does not form the proper contraction muscle your heart needs to function properly.  Some can live with this type of cardiomyopathy but others, depending on how it impacts their heart function, may need a heart transplant, as in our case.

That said, she's been doing fantastic (knocking on wood) since and we celebrate her special heart day every January 16th.  Since I've been blogging I've done a few heart day cakes for her, like this Reverse Rainbow Cake, Flying Heart Cupcakes, and an Au Natural Red Velvet Cake.


This year I wanted to try one of those "surprise inside" cakes that are all over the place these days. Amanda from I Am Baker really started this trend.  She's done some amazing cakes and even has her first book due out in March (pre-order it here)! I've also seen some surprise cakes done by baking a loaf cake, cutting out some shapes, then baking those shapes into another loaf cake.  That seemed relatively easy so I gave it a go.


For this I just used a boxed yellow cake mix.  Mix up the batter as directed on the box but add an extra egg.  Divide the batter in half and tint one half red with some food coloring.  I use Americolor Super Red.  Bake it in a loaf pan as directed on the box.  When cooled cut out your shape (hearts of course!).  Just make sure your shapes are small enough to fit inside your loaf pan with some room on the top/bottom.  


To the other half of the batter I added some organic Taza Stone Ground Dark Chocolate and about 1/2 cup of unsweetened cocoa.  Really Good Stuff! Melt about 2.5 ounces in the microwave and mix into the yellow cake batter.  Definitely use good dark chocolate for this.  I promise it's so worth it!


Add a little of the batter to the bottom of a loaf pan and then add your cut out shapes.  I put mine upside down so I could use the flat side as the top of the cake.  Then add the rest of the batter to the loaf pan and try to cover as much of the shapes as you can.  Bake at 350 degrees for about 30 minutes.


Frost with your favorite buttercream and add some heart sprinkles!


I was a little nervous to cut into it, but it came out ok! Not exactly centered, but nothing is perfect - and the kids loved it giving the cake look and flavor rave reviews.  Thank goodness since they are my worst critics these days!  The dark chocolate added to the mix made the cake better than any chocolate cake mix I've had too.


And yay, I can cross surprise inside cake off my to do list.

Reverse Rainbow Cake for a Very Important Celebration!


So doing a rainbow cake has been on my "to do" list forever! But I kinda feel like they've been done ad nauseum by now (although I still love seeing every single one, they always look so pretty!!).  And most rainbow cakes really look like a bit of work since you need to tint every layer of the cake prior to baking, bake each layer separately, and hope you get them to come out with an even thickness (or cut them to even thickness-not my specialty!).

And since I am simplifying much more this year, I decided to do a rainbow cake but in reverse, with the icing layers in rainbow colors and without icing the outside of the cake.  Many have done the no icing cake look like here and here, and I really think it looks pretty cool.


I needed this mid week, so I just used a doctored chocolate cake mix (add an extra egg, 1 cup of buttermilk for the liquid and use the same amount of oil).  It's also a 6 inch cake so much smaller than a regular sized cake.  Once baked in your 6 inch pans (I used 2), freeze the cakes so you can then slice them in half so you get 4 kinda even layers.  The icing is homemade buttercream as I always seem to have buttercream around (it freezes nicely and you can then de-frost to use whenever you need it).  I use this recipe because it comes out great every time.  I did use orange extract in place of the vanilla for this batch of buttercream.

Then add some buttercream to 4 bowls, and tint with food gels with the rainbow colors you like and then add between your cake layers.  So simple and easy!


For the top I wanted to do a heart design so used a Wilton icing tip #47 to add some swirly hearts around the sides and then a big heart in the middle.


This little cake was for a very important celebration, my kiddo just passed the 5 year anniversary of her heart transplant! Woohoo!!! She is 5 now (my twins are almost 6!) and had the transplant when she was 8 months old.  She had a very rare type of cardiomyopathy called non-compaction cardiomyopathy where the heart muscle does not compact and function as it should.  It's amazing to think about that time and how absolutely fantastic she is doing today.   On January 16th every year (like here and here), we celebrate her and our lives and remember her donor family that probably under extremely difficult circumstances decided to give us a gift that we can never say thank you enough.  We try to enjoy every moment we have every single day and *try* not to get caught up and frustrated with things that don't really matter in the end.  We know in our hearts what matters and try to live that everyday.

flying heart cupcakes.....!


...so i know it's a little early for valentines day treats....actually not really if you check out the retail stores these days....lots of red, pink and white candies all over the aisles now....(although you might be able to find the random christmas candy on sale for like 95% off too!)

....and although they do fit in with valentines day...i had my 4 year old girlee girl old in mind when i made these....which are in celebration of her heart day.....on january 16th it will be 4 years since her heart transplant (she and her twin will be 5 in april)....and we've taken to celebrate it as if it's her second birthday...well because it is...!

....and why flying hearts?? (and actually some heart & arrow minis too!).....well i remember drawing hearts like this when i was little for some reason.....

....and more importantly....it's a tribute to my shmoopie's donor....i don't know the circumstances around what happened....but i do know my little one would not be here if not for her donor's family...which made the decision to donate probably under extremely difficult circumstances...

....and if you are part of a donor family.....a sincere THANK YOU to you!...you may never know who was the recipient of the donation, but as the mom to a kid that was on the receiving end......a thank you just doesn't seem enough.....but we will always be eternally thankful for donor families that make those decisions....so virtual cupcakes made in your honor will have to suffice....i wish i could give you one in real life!.....

....and these are also another check-off on my 2012 pinterest to do lists!....i saw this idea awhile back to make heart shaped cupcakes here....by baking with a marble between the liner and pan....neat, right?


....frost with your favorite icing.....and top with a bunch of these.....



...and for the minis...i didn't even do the marble thing....just piped a heart shape onto the cupcake with icing....then dip into sprinkles....


....wings and arrows are made with white, red, and pink candy wafers.....(add them to a zip lock bag, nuke until all melty, snip off an end of the bag....and "pipe" out the shapes....let harden for 10 minutes or so).....add some extra candy off the wings so you can stick that part into the icing when you decorate the cupcakes...it will stay in place easier.....


...and you get some heart shaped cupcakes topped with lots of sprinkles...which are the best kind IMHO.....and of course you can absolutely use these for valentine's day too!

happy heart day cake....!

...nope didn't mean valentine's day.....happy heart day.....january 16th is a really special day around here....today is the 3rd anniversary of our daughter's new heart.....she had a transplant when she was 8 months old.....(and knock on wood....has been doing absolutely fantastic ever since)....spent the entire day as a family enjoying the day....and made her this heart cake....because it is such a special day....and actually it will work for valentine's day too....!

....found this red velvet cake recipe....and since i've been meaning to do less with the artificial colors....went with beet juice for the red coloring.....you mix about 4 ounces of beet juice with the cocoa powder.....it's not a really intense red....and with the cocoa it ended up coloring the cake like a cafe au lait color...hence the "red" velvet.....(i was so tempted to just add some red americolor.....but in the end wanted to see what the beet juice did....if anything....)


.....the cake is a 6 inch layer cake.....baked 3 layers....and once cooled cut each of the layers in half....so there were 6 layers iced with vanilla buttercream.....crumb coated first.....


.....then iced with a thicker layer....and used a spatula to make the side markings...amanda from i am baker gives a great tutorial on how to do this.....the hearts are made from what else...?....candy melts!....made from a heart mold in all the different colors.....before they were totally hardened....add a tooth pick (kinda like a heart lollipop) so you can insert them into the cake....the little hearts in the middle of the candy hearts are from a valentine's day sprinkle mix.....attached with some melted candy.....


...so you can see that it wasn't really a red velvet cake with the beet juice....next time i might try beet powder to see if that works any better for red coloring....if anyone has any other suggestions let me know....!

....but it was pretty tasty regardless...and we just called it a chocolate cake and the kiddos had no problems with that....!.....also need to work on getting more even layers with a layer cake....all in all an awesomely awesome day....
