spring meringues.....!


...so i've been getting martha stewart's living magazine for years now....maybe like >10 years, yeah i know that's a lot of trees.....i used to get so excited to get the new issue and really looked forward to going through the entire issue from front to back.....i'd definitely make the crafts or the recipes.....but over the past couple of years it's been...well....meh....nothing really calling my name to be made or the ideas were a little too much....like i'm not making my own planters!...

.....however when this april's issue came and i saw these lemon meringue flowers...i knew i had to make them!....aren't they super cute???....and they were super simple for someone whose never made meringues before....made from egg whites, lemon juice and zest, sugar, and some candied lemon peel...i made the candied peel but you could buy it as well....if you make it....be sure to get most of the white pith off the rind....


...boil peels for 5 mins then add sugar to water and add lemon peels once it comes to a boil...


...for the meringue.....once you add the sugar to the egg whites.....mix it up on high speed....like on 10 on the cuisinart--which is the highest speed....that got it nice and fluffy with the peaks....


....then fill a pastry bag (that's tough with meringue because it's so light and fluffy!)....and pipe the flowers onto parchment....used a wilton #4 tip....


...the recipe says to bake for 2 to 2.5 hours.....in my oven that would have been way too long....and at 1.5 hrs they got a tad too dark....probably should have taken them out at 1 hr 15 minutes but check on them at about an hour....

.....also made chicks and bunnies too!....just piped them freehand and used sprinkles/candy lemon peel to accent...the bunnies were fragile peeling off the parchment paper, and we lost a few...sigh....next time i'd spray the parchment with non-stick spray since there's no butter or oil in the meringues....

....they were melt in your mouth super light and nicely lemon-y sweet!....perfect for the spring weather we're finally having....


.....and i may give martha the benefit of the doubt next time since i was excited to see these in the mag.... maybe next month i'll even attempt a "good thing"...and actually her recipes are usually spot on (and the pics of everything are always awesomely awesome...!)....for full disclosure it also could be that since i have a 6 y/o and almost 4 y/o twins there is no time for any leisure reading.....so i'm not blaming it all on martha's content...!
