It was someone's birthday....!

...I won't reveal which birthday, but it was a pretty big one...! And the only other person that I know that loves Hostess Snoballs (besides me) is my sister...so that's what she got, big pink balls....


......chocolate cake, filled and frosted with marshmallow frosting......


...then covered in tinted pink coconut.....


...ok I know I know, not everyone's snack of choice, but it did taste like a Hostess Snoball!

happy birthday to our pup Napa!


...yeah ok I made our dog Napa Valley birthday cupcakes...she is part of the family and has such unconditional love....! She is 10 this year and I finally remembered her birthday before it went by...unlike the past couple of years. These actually really smelled good and it's all normal stuff in them, sorta like a carrot cake muffin with some peanut butter in them and the icing is cream cheese based. It's just not very sweet.



She seemed to really like them, so guess the recipe is a keeper in case I get any requests for doggy cupcakes (would have had the kiddos try them had they not had peanut butter in them... :)

for the hot hot summer days...watermelon cupcakes!


...actually just fresh watermelon is much better for these 98 degree+ days, but I had a ton so figured I'd try something with it. These are watermelon cake with watermelon cream cheese icing with chocolate pieces for the "seeds"....but they look better than they tasted (for me the cake was too sweet--the only real recipe I found for watermelon cake used a box of watermelon jello added to the cake mix in addition to pieces of real watermelon, but way too sweet IMHO). The icing was really good though, and I also used it on plain vanilla cupcakes. They were pretty awesome. It uses real watermelon juice and has a very subtle watermelon flavor. I did use a lot more confectioners sugar than the recipe called for so it was more "pipeable"--I'd definitely use this frosting again but not the cake!

Happy 4th of July....!


cupcake bites....fun and yummy (they are super sweet sweet, so the kids love 'em) but they do take forever to make, it's hard to whip up a *quick* batch. Probably took even longer since I opted for the red and blue cake inside, but it is the 4th of July and therefore isn't it mandatory to have red, white & blue of some sort..!?? They are dense, outside covered in candy melts and inside is cake mixed with icing....take one with a lipitor and you should be good to go.
