I would have held off posting these had I known about a cupcake challenge!...but these are for Hoosier Homemade's Cupcake Tuesday Cupcake Challenge.
When I think of summer I really do think watermelon really represents so well. These are watermelon cake with watermelon cream cheese icing with pieces of chocolate candy melts for seeds.
Watermelon Cupcakes:
- 1 box white cake mix
- 1 (3 ounce) package of watermelon jello
- 1 and 1/3 cups cubed watermelon
- 3 egg whites
- 1 tablespoon of oil
Watermelon Icing:
- 6 ounces of cream cheese
- 1/4 c butter
- 1/4 c watermelon juice
- 3+ cups confectioner's sugar
...and if you can't do this...
sharing these at tidy mom!
Spotted these on Hoosier Homemade's site. The watermelon "seeds" really make it! These look tasty. Watermelon's such a tricky flavor to work with when baking so using watermelon Jello was darn clever.
ReplyDeleteSo cute! I love the little seeds too! I'm glad I'm not the only one having trouble with my frosting!
ReplyDeleteThanks so much for joining the Cupcake Challenge! I look forward to seeing more of your creations!

I didn't even know they made watermellon jello! I agree - the "seeds" really do make it! I wonder if you could even tint the icing pink?
ReplyDeleteVery cute!
thanks ladies, my mom went on a jello kick awhile back and I just happened to have it around. It's not my recipe but one I found on a bunch of sites when looking for real watermelon recipes. The icing was great! and the color is all from the watermelon juice!
ReplyDeletethanks for stopping by!
