....so to occupy some time during hurricane irene this past weekend, made these goodies!......which were made with some left over frozen cupcakes....and didn't really feel like making a new batch of buttercream just for these....so instead of cake bites made with crumbled cake and frosting...they are made with marshmallow fluff...!....and you may be thinking....."where's the rainbow"....?
...inside of course....!...so really these are faux mini ice cream cones made with multi colored cupcakes, fluff, and vanilla candy melts.....
...i only used one cupcake for each color (because that's what i had in the freezer!)....and mix with about 1 tablespoon of fluff....(or just add enough fluff until you get the consistency of the regular cake/frosting mix for cake bites---don't add too much or it's too sticky).....
...then roll each color into a "ball" and freeze for about 1/2 hour or so....
...then slice each into 6 pieces.....(hence the need to freeze them!)....
...then mix and match the slices to get rainbow "balls".....
...take off the first inch or so of a sugar cone to make it smaller for the cake ball....add some melted candy wafer to the edge of the cone and pop a cake/fluff bite on top.....then re-freeze for about another half hour or so....
...then dip in the vanilla candy melt and add some cool sprinkles and a mini red m&m on top....and you get some really cute mini rainbow ice cream cone cake n' fluff bites....(that's a mouthful....literally and figuratively...!)
.....and one of these was a much better view than my backyard after hurricaine irene!....hope everyone else on the east coast made out ok after the storm....we lost power for about a day (which is so fun with 3 kids under 7!)....what's next after an earthquake and a hurricane on the east coast..?...volcano eruption in nyc,?...bring it on!!

ReplyDeletethanks everyone! these were fun! to trim the cones i just broke some off a little at a time until i got the size i wanted....in the past when they were "fresher" and broke off chuncks too easy, i have wet the top of the cone a bit....then it came off without cracking the cone too much. ReplyDeleteHi! I made multi color cupcakes by starting with a boxed cake mix, separating batter into about 6 bowls and tinted with food gels to the colors wanted. Then just baked up the cupcakes. Simple :) thanks for stopping by and let me know if you have other questions.

Hi Tracy, you can use melted white chocolate as well, but i used vanilla candy melts or wafers made by wilton http://www.wilton.com/store/site/product.cfm?sku=pg_candymelts (there are other brands as well). Good luck!!

ReplyDeleteDeb, fluff is basically spreadable marshmallow! From their site, Marshmallow Fluff contains Corn Syrup, Sugar Syrup, Dried Egg Whites and Vanillin. You can just use frosting instead of fluff for this, i was just using what i had in the cabinet!
