"i give up" cupcakes....!


....yep, i give up....halloween stuff is in walgreens by the end of august.....turkey paraphernalia shows up in cvs when the kids start school, and holiday/christmas tchotchkes by the time you decide you're in need of some face make-up for the halloween party you forgot you got invited to comes around.....


...so decided today that instead of complaining about how fast the holidays are coming this year yet again.....to just dive in and accept it.....accept that yes....it's less than a week away until thanksgiving....and that means that christmas is only a month or so away.....so in the spirit of that....baked up some christmas cupcakes to start off my acceptance of how fast the time flies and that i will, repeat, will start enjoying the holiday season, no matter how busy life is....


....but you can take short cuts as necessary....!....this is a doctored box mix (use an extra egg and replace the water with 1 cup of buttermilk)....decided to mix it up a bit and still go with green and red cupcakes (tint half the mix with red food gel and half with green)....but sliced them up and mixed and matched the layers....freeze the baked cupcakes first....it's much easier to slice them evenly......


...then filled with a marshmallow buttercream between the layers....swirled on top.....and sprinkled with some red and green large non-pareils...


....life is good and there are so many things to be thankful for....so these are a present to myself for remembering that's the case everyday.....happy holidays....!

  4. These cupcakes are adorable! And... I'm totally with you. This year I just decided to give in as well, and start celebrating Christmas early. I looked at in this way: The earlier I start celebrating it, the more weeks of the most wonderful time of the year I get!

  6. I LOVE LOVE LOVE these!!! I am TOTALLY making these and I PROMISE to give you props!! :) Ya know these would be SO cute for any holiday. Make pastels for Easter, red white and blue for July 4th. OH red and pink for valentines day! OH I LOVE THESE!! :)

  16. probably not much, the buttermilk and egg make them a little denser, but as long as you freeze them you can probably cut them ok....GL!

Instead of cooking separate red and green cupcakes and cutting and gluing back together for the "layered" look, take the same mixture and separate that into two bowls, then add food coloring to each (1 red, 1 green) And alternate red-green-red-green.. when pouring the mix into the cupcake tin. Easier, cleaner, less icing and people will wonder how you did it!!

  20. I’m planning on making these for my high school TA next week and was wondering which cake mix you used. As in “yellow” cake mix or “white” cake mix? Wasn’t sure if it would affect the vibrancy of the cupcake color, and would love to hear what you did since these look amazing!

    1. I don't think it would be a huge difference. Trying to remember back and I think I used yellow cake mix! Good luck would love to see a pic how they turn out!!

    1. I think i froze them for a few hours, but the longer you freeze them the easier to slice (oh and use a serrated knife!). Good luck!
